Whaleback Peppers and Kielbasa

Ingredients:
Olive oil
Head of Fresh Garlic
1-2 lbs. Smoked Kielbasa.
1 Medium Tomato
3 Medium Peppers
Large Spanish Onion
1 cup Curley Leaf Parsley
1 cup Basil
½ cup Mint
Juice of one Lemon
Juice of one Lime
Whaleback White to taste


Outdoors, using a flint and steel prepare a good bed of coals.
Add olive oil, chopped onion, whole garlic cloves, simmer for two to three minutes.
Add Kielbasa, brown without burning the garlic. Add chopped peppers, tomato, parsley, mint, basil, lemon and lime juice and Whaleback White to taste. Gently simmer covered for 30 minutes, stir when needed.

Simmer and serve with friends and Whaleback White.
